korean spicy noodles
Add kimchi, kimchi juice, garlic, sugar, red pepper paste, sesame oil, vinegar, and sesame seeds into a mixing bowl. Mix well with a wooden spoon and set aside.
Add noodles into a pot of boiling water and close the lid. When water comes to a boil, open the lid and stir the noodles. Cook a few minutes more with the lid open until noodles are cooked well.
Rinse noodles in cold water and strain.
Portion noodles onto serving plates and add the sauce mix on top. Add cucumber, egg and sprinkle with additional sesame seeds.
Serve immediately.
Somyun can also be replaced with buckwheat noodles (냉면).
