Delicoius - a bit of work, but worth it!
Heat a skillet and coat with 1 tablespoon sesame oil. Add rice in a single layer. Cook 1 minute and remove from heat. Let stand 20 minutes.
Heat a non stick pan. add 1 teaspoon sesame oil add tofu and cook until crisp and brown. Put in dish in warm oven
Cook each of veg in 1 teapoon oil and when cooked toss with some soy sauce - to taste. 1 teaspoon for light veg, 1 tablespoon for heavy. Veg should be crisp. Drain mushrooms well before adding soy sauce. Spinach should only be wilted. Keep veg warm in oven.
To prepare, split rice between 4 bowls. Add veg in sections over rice. Put fried egg on top of veg. Serve with remaining soy and hot sauce.
