A delicious old-timey recipe with a twist-you bake it in the microwave!. The rich frosting perfectly compliments the soft texture of traditional gingerbread.
Line 1 1/2 quart baking dish with waxed paper.
Cream Shortening & sugar. Add egg yolk & beat well. Add molasses & milk; Blend.
Blend flour, soda, salt, spices. Stir into creamed mixture. Mix in raisins. Turn into the dish spread evenly.
Cook uncovered in Microwave Oven 6 to 7 minutes on Medium-high or until wooden pick inserted in center comes out clean; ROTATE dish 1-quarter turn once.
Cool Slightly, turn out of dish; peel off paper & spread thinly with sugar frosting, if desired. Cut into squares.
Frosting:
Combine all frosting ingredients except pecans in small mixer bowl. Beat at medium speed, scraping bowl often, until smooth (1 to 2 minutes).
You can garnish these with chopped or whole pecans, if desired.
