A southern twist on a classic Irish soup also known as Brotchán Roy which is traditionally served during Lent. My version is the same base soup with the addition of smoked ham, Louisiana smoked hot sausage and cayenne pepper.
Melt the butter in a medium saucepan over low heat; add the leeks. Cook, stirring occasionally, until the leeks are soft, about 15 minutes.
Add the broth and milk; raise heat to high and bring to a boil.
Add the oatmeal, smoked ham and fresh cracked black pepper to taste. Return to a boil, stirring occasionally; reduce heat to low. Cover and simmer gently until oats are tender, 45-50 minutes (less if using Quaker oats).
Add the sausage and reduce heat to a simmer
Note: The oats will naturally thicken the soup.
Add the shrimp at the last minute and cook until the shrimp are pink, do not overcook
