Light and fluffy! These are fabulous with big meals like Thanksgiving or Christmas. A little bit of sea salt gives a nice salty crunch every now and then. Wonderful!
1) Dissolve the yeast in a large mixing bowl with the cup of lukewarm water. Let it stand for about 5 minutes.
2) Add the oil, egg, sugar and the 1 1/2 cups of water. Whisk together by hand.
3) Add the flour and mix on medium low speed until the dough holds together, about five minutes. The dough will be wet looking, but if it doesn't form a cohesive ball, add a few tablespoons more of flour. If the dough is too dry, add water, a tablespoon at a time, until it's not so dry. Let dough rest for 20 minutes, then add the salt and cinnamon (if desired) and knead well - at least 5 - 10 minutes.
4) Spray a large mixing bowl with cooking spray and put the dough in the bowl and cover with a tea towel and let rise for about an hour and a half.
5) Preheat oven to 350 degrees, and spray a large sheet pan with cooking spray or line with parchment paper or a silicon baking mat.
6) Punch down dough and pinch off pieces of the dough and roll into golf ball size (for dinner rolls), or tennis ball size (for sandwich rolls). Arrange the dough on the pan, with sides touching, then cover with the tea towel and let rise for 30 minutes. The rolls will not double in bulk during this rise.
7) Bake rolls for 18-30 minutes, or until golden brown. Brush tops with Olive Oil or butter while still hot.
*Note: The cinnamon makes these rolls fairly sweet. I usually leave it out for a more savory bread. But, don't skip the sea salt...it's a perfect addition.
