Simple. Fresh. Spicy.
Prepare all the ingredients and stir them up. It's that easy.
I use a "Vidalia Chop Wizard" for the tomato (large squares) and the onion (small squares). I use the old knife and cutting board for the garlic, cilantro, jalapeƱo, and habenero. Basically, I go for larger chunks of tomatoes, smaller chunks of onion, and very small bits of everything else. You, of course, can chop and dice any way you choose.
The order isn't very important but I do find that the garlic and cilantro like to stick to the knife so it's helpful if you do the lime juice last, using the lime and its juices to clean the blade.
