Preheat oven to 400. Use a mandolin or slice vegetables as thinly as you can. Creat layers like lasagne: zucchini, onions, Swiss chard,goat cheese,carrots, mushrooms. Repeat. Top with manchego cheese. Cook for 30 minutes or until top layer of cheese is slightly golden.
