1 1/2 c Kalamata olives; pitted
1 1/2 c Picholine olives; pitted
4 Anchovy fillets; chopped
3 Lemons; juiced and zested
2 tb Fresh thyme; chopped
1 tb Fresh Oregano; chopped
2 tb Garlic; chopped
1 c Extra-Virgin Olive Oil
1/2 c Capers; drained, rinsed
Black Pepper; freshly ground

Original recipe makes 24 Servings



Put all ingredients in a bowl. Mix well and add pepper to your desired taste.

This recipe yields 5 cups.

NOTE: I cannot vouch for the ingredient proportions. I used this recipe as a guideline for -which- ingredients to include, but essentially did it to my own taste and ignored the amounts recommended. The ingredients do combine however to make quite a delicious tapenade, and with the ingredients above and a food processor, you'll be all set for your next party.
