This is a dish we as a cooking club put together and found it to be inexpensive, good and kid friendly
In a nonstick skillet coated with nonstick cooking spray, sauté onion and green pepper until tender. Add beans; heat through. Spoon about ½ cupful off center on each tortilla. Sprinkle with cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with salsa if desired.
