"When you're feeding the dreaded "grumpy toddler", it's tempting to take the easy route and feed them things you know they'll like, regardless of the nutritional value. Thanks to recipes like this one, I don't have to. It was easy to make, tasty, and toddler approved. I do agree that more seasoning wouldn't hurt, but as other reviewers pointed out, the sweet potato makes you feel like you're eating a very cheesy food. Overall, very satisfying."

Servings

Preparation

Peel sweet potato and chop into small pieces. Boil for about 10 minutes or until very soft. Drain and mash with a potato masher.

Lay out one tortilla. Cover with 1/4 cup mashed sweet potato, 1/4 cup black beans, 1/4 cup cheese, and salt, chili powder, and cilantro to taste. Cover with second tortilla.

Spray frying pan with a little fat-free cooking spray and fry your quesadilla a few minutes on each side, until cheese is melted and beans are heated through.

Notes

Note that 1/2 of a quesadilla is only 3 points. The only reason the whole quesadilla is 7 points and not 6 is because of the 4 g. "fiber cap"

This is a delicious lunch (or dinner)! Next time I will mix the sweet potato with the beans and put cheese on both sides, but the flavor is really good! We had some baked sweet potato left over and I was sure to rinse and drain my beans before measuring them out. Never thought the two would blend so well, but it was so yummy!!

These are great! I read the reviews about needing more spice, so I added cumin, chili powder, and salt to the sweet potato mash and simmered the beans with some sauteed onions, green peppers, and cilantro. Served with lime-cilantro brown rice, pico de gallo, and sour cream. So good and filling!

This was super quick and the kids and I enjoyed them!! I mashed the sweet potatoes with some cinnamon & sugar and then a bit of spicy seasoned salt. Then used red beans in chili sauce, drained well. Topped with shred cheese and it was a sweet and spicy delicious combo that I felt good about serving my kids!! Thank you for the great idea!!

Would make again. Definitely needed the spice for flavoring. Added lots of cilantro and some onion.

Don't forget to add the salt (which I did). I think it could have been spiced up a bit in other ways too.

this was pretty good, I only made one with half a sweet potato and put lots of Cajun seasoning on it, it's just missing something though

Delicious! I did add spices to the sweet potato mash - chili powder and paprika . Also added pickled jalapeños and some chicken. Turned out amazing !
