Suggest a better descriptionPlace beans in sauce pan and pour over fresh cold water to cover beans, bring to a boil and boil for 10 minutes. Reduce heat, cover and simmer for 35 minutes or until beans are tender. Drain well and set aside.
Heat oil in a frying pan over a medium heat, add onions, chillies and cumin seeds and cook, stirring for 3 minutes or until onion is soft. Add tomatoes, wine tomato paste, sugar and beans and simmer for 10 minutes or until mixture reduces and thickens. Stir in coriander.
To serve, place corn chips on a heatproof serving plate and sprinkle with cheese. Cook under a preheated grill for 2 minutes or until cheese melts. Scatter with avocado and sprinkle lime juice, then spoon over bean mixture and serve with sour cream.
