Soak the black-eyed peas in water overnight
In a dutch oven or pan, heat EVOO over medium heat
Add the onions, carrots, celery, and garlic, and sweat the vegetables until soft and onions translucent. Stir occasionally
Add the diced ham and bone into the dutch oven and sauté for 5 minutes
Add the black-eyed peas
Add the chicken broth and stir
Increase the heat until it starts to boil and then reduce heat to a simmer
Simmer for 45 minutes to 1 hour or until the beans are tender
Add the spinach and cook until wilted
