3 cups carrots; Grated
4 Eggs
1 1/2 cups Vegetable oil
2 cups Sugar
2 cups Flour; sifted
1 cup black walnuts; Chopped
1 teaspoon Vanilla
1/4 teaspoon Black walnut extract
1 teaspoon Cinnamon
1/2 cup Buttermilk
1 cup powdered sugar; Sifted
1/2 teaspoon Baking soda
1 tablespoon White corn syrup

Mix all ingredients together. Bake 90 minutes. Remove from oven and, while cake is still hot, glaze with Buttermilk Glaze. Buttermilk Glaze: Blend all ingredients well. Pour on top of hot cake.
