This is a great four layer butterscotch dessert that is wonderful for cooling down on summer nights.

PREP TIME: 20 min + chilling
Combine the cracker crumbs, 1/4 c sugar substitute and butter in a small bowl. Press into a 9x13-inch baking dish coated with nonstick cooking spray.
In a small bowl, beat the cream cheese, 1/4 cup milk, and remaining sugar substitute until smooth and then spread over the crust.
In another small bowl, whisk the remaining milk with the pudding mix for 2 minutes. let stand for 2 minutes or until soft-set. Gently spread over cream cheese layer. Combine whipped topping and rum extract; spread over the top.
Refrigerate for at least 4 hours before serving.
Feel free to experiment with different flavors of pudding and extracts.
