This tastes even better than a BLT sandwich ... makes a delicious fast supper.


1/2 package elbow macaroni; (about 2 cups)
8 slices bacon; cooked & coarsely crumbled
1 cup grape tomatoes; cut in half
1/2 cup Thousand Island or Bleu Cheese Dressing
1 bag romaine

Original recipe makes 4 Servings



Cook macaroni; chill in cold water and drain. In large bowl, combine

macaroni, bacon, tomatoes, dressing and romaine.

Absolutely fantastic. Used mayo, Dijon mustard and ranch for the dressing. Also substituted fire roasted canned diced tomatoes since fresh were not yet in proper season. Was concerned hubby and toddler wouldn't go for lettuce in the pasta salad, but needn't have been. Hubby ate 3 bowls in one go, and he's the pickier of the two!

Easy and good! I followed the recipe exactly and it turned out great :-) Next time I may follow some of the other comments and try it with ranch dressing instead of bleu cheese just to see if it adds a little extra kick. The bleu cheese was good, but maybe just a little bland... I also didn't know how long to chill it so I did overnight, and that seemed to make the tomatoes just a little soft, so will probably only do a few hours of chill time in the future.

I should have used ranch dressing; I think the kids would have been more receptive. But DH and I enjoyed it.
