Ready in 40 minutes
A great way to start the day and to surprise your loved ones with a sweet, yet healthy breakfast.
In a large bowl, whisk together the eggs, milk and vanilla and set aside. Spread 1 tablespoon of cream cheese on 4 of the pieces of bread. On top of each creamed slice, sprinkle 1/4 of the blueberries and 1/4 of the white chocolate chips. Cover each with another piece of bread to make a "sandwich".
Spray a large nonstick skillet with cooking spray and turn heat to about medium heat. Carefully dip each of the "sandwiches" into the egg mixture until moistened. Then place on the skillet and cook over a medium heat for 3 to 4 minutes per side, until the outside is golden brown and the center is warm and chocolate is melted. The inside may still be a bit moist due to the fruit and cheese spread but this just adds to the deliciousness in my opinion, but play around to get the right crispness for you.
Put onto serving plates, I like to cut each in half for presentation, and top each "sandwich" with 1/2 Tbsp of maple syrup. This may not sound like much, but the fruit already gives a moistness to the dish and you only need the slightest bit of sweetness from the syrup. If you aren't watching your weight, then drizzle that on!
ryanne_y_smith_1 3y agoYou can stuff the French toast w anything. I use flavored cream cheese or flavor original cream cheese myself. Either way I put one layer in a Pyrex then my stuffing and then another later w the egg mix over top. Delicious!

Chakragal 4y agoThis was a quick easy recipe. I think next time though I will use some sort of a cheesecake filling. Instead of maple syrup I made a blueberry sauce with fresh blueberries. Powdered sugar on top.
mariabernadettesanchez 4y agoThe cream cheese made it taste weird. Next time i'll use ready made cheese cake.
Afarlie 4y agoDefinitely making these they sound yummy! Will try it with peaches not really into blueberries.
Meadowlarksong 4y agoMy husband loved it. Takes the guilt out of this yummy comfort food. Super easy and tasty. Looks pretty with powdered sugar sifted over it.

nancynogueras 4y agoPretty good, I think I put too much cream cheese on it ( I eyeballed the amount) but it was very good, I added some nutmeg and cinnamon to the egg mixture. Tasted great! This recipe a nice twist to one of my favorite breakfast foods.
sherry3363 4y agomy (11 & 14) kids didn't like them. I wasn't crazy about them. I think it was the heated cream cheese. I enjoyed the fresh fruit. I think, ill stick to added the fruit after the French toast is prepared. thanks
