Place the blueberries in a (9") cast iron skillet over medium heat. Add the lemon juice and sugar. Cook until soft, tasting for sweetness. Pour off and reserve any extra juice for use later as a fruit sauce. Roll the pie crust out to be 1" larger than the skillet. Place the dough on top of the pan. Press the edges down with the blade of a butter knife. Brush the crust with milk. Bake until the pastry is golden brown (20-30 minutes).
