Suggest a better description1.) place the 12 bocconcini balls on your clean work surface
2.) divide the sausage into 4 equal sections - from each section you will make 3 meat balls
3.) take these divided segments and wrap meat around the bocconcini to form a meatball - repeat until all 12 meatballs are completed. Place meatballs on a sheet tray and drizzle with olive oil.
4.) bake 18 to 20 minutes in a 400 degree oven until cooked through and evenly browned.
For the broccoli rabe:
1.) Bring a large pot of well salted water to a boil. Set up a bowl of well salted ice water. Drop the broccoli rabe into the boiling water and cook for 1 minute. Remove from the boiling water and plunge immediately into the ice water. Once cool remove from the ice water and let dry.
2.) heat a large saute pan over medium heat. Add 1 tablespoon of olive oil and the smashed garlic and red pepper flakes.
3.) once the garlic is brown and aromatic, remove from pan and discard.
4.) add broccoli rabe to oil to heat up and season. taste and season with S&P before serving.
