"Made this last night and my entire family loved it! Juicy and flavorful, perfect blend of seasonings. Sliced just what we were going to eat last night and left the rest in one piece so that I could reheat it tonight. To reheat, I sliced in half inch slices, and simmered on low heat in a skillet with a bit of broth just until heated through. Just as juicy and flavorful tonight as it was yesterday, THANKS for a great recipe!"


Ingredients

1 3-lb boneless pork loin roast
Herbed Pepper Rub:
2 tablespoons Cracked black pepper
2 tablespoons Grated Parmesan cheese
2 teaspoons Dried basil
2 teaspoons Dried Rosemary
2 teaspoons Dried thyme
1/4 teaspoon Garlic powder
1/4 teaspoon Salt

Preparation

Pat pork dry with paper towel. In small bowl, combine all rub ingredients well and apply to all surfaces of the pork roast. Place roast in a shallow pan and roast in a 350 degrees F. oven for 1-1 1/4 hours (18-20 minutes per pound), until internal temperature, measured with a meat thermometer, registers 155 degrees F. Remove roast from oven and let rest for 5-10 minutes before slicing to serve. Serves 6-8, with leftovers.

super delicious! i was a little concerned that the meat would be a bit dry simply because it didn't call for anything except dry seasoning. a pleasant surprise and will surely make again!!

This was good I didn't use all the pepper it called for and I didn't have any thyme so I just left it out.

We make this at least once a month. I reduce the pepper a little and use italian breadcrumbs in place of the parmesan.

Simple ingredients for a succulent meal. I had to cook this for about 15-20 minutes longer than indicated, and cooked covered with foil, but this turned out so juicy and delicious - everyone kept coming back for more! I served this with mashed potatoes and gravy, fried summer squash and corn on the cob. Yum!
