3 large sweet potatoes
1 cup Sugar
2 Eggs
1 stick butter; softened
1 tsp. Vanilla extract
Crunch Topping:
1/3 cup Butter; melted
1/3 cup Flour
1 cup Brown sugar
1 cup Pecans; chopped
1 tbs cinnamon

Original recipe makes 6



Boil potatoes until tender. Take skin off when cooled and able to

handle. Put in a large bowl and whip them until fluffy. Add all other

ingredients. Pour into a greased casserole and top with the crunch

topping. Bake at 350 for 45 minutes.

yummy! the pecans are a nice change from the typical marshmallows.

The word, "delicious" doesn't do it justice. A perfect complement to the "Cornbread & Sausage Stuffing" recipe, # 164683 on Big Oven, however, I might be a little biased. This is another favorite for my list.

Kids love it! It was very good, however, I would do a little less sugar. It was a little too sweet for me.

Made this with canned sweet potatoes and cut the sugar to account for the light sryup. Was a hit at dinner!
