2. In a large bowl, combine the wheat bran and buttermilk. Let stand for 10 minutes, until the bran is softened.
3. In a small bowl, gently whisk together the egg, oil, and vanilla extract. Add to the bran mixture.
4. In a medium bowl, combine the remaining ingredients. Slowly add to the bran mixture, mixing well until the batter appears smooth.
5. Evenly divide the batter among the muffin cups. Bake for 15 minutes, until a toothpick inserted into the center of a muffin comes out clean.
