No-knead bread
Mix water, honey, and yeast. Let sit about 10 minutes, until proofed. You can skip this step if you're using fresh yeast. Stir all ingredients together.
Allow to rise in the fridge overnight. It will last in the fridge for a couple of weeks. Cook as needed.
To cook, shape how you like it and let it sit out for an hour or so for a second rise.
Put a pan of water in the bottom rack of the oven. For a crustier bread, preheat oven to 450F. For a softer crust and additional rise time, don't preheat the oven and set the oven to 400F when you put the bread in the oven. I usually do rolls which take 15-20 minutes. Larger loaves will take longer.
