refried beans from scratch
1. Place beans in a large bowl and let sit over night. Replace water as it is absorbed.
2. Place beans in a large saucepan and cover with an inch of water. Place over high heat and bring to a boil. Continue to add water and boil until beans reach desired, "mashable" consistency.
3. When the beans are ready, add the onion, 1 tablespoon garlic, jalapeno, tomato, cumin, and chilli powder to the beans and mix. Bring to a boil and reduce to low and allow to simmer about 20 minutes -- just allowing other veggies to soften and flavors to mix -- adding water as needed.
4. Place bean mix in food processor with remaining 1 tablespoon garlic, the olive oil, and salt and pepper. Process to achieve desired consistency, using additional water as needed. Serve.
