- Heat oil in saute pan on medium high heat
- Add the greens, garlic , and red pepper flakes and saute until greens are soft and cooked thru about 5 min.
- crack eggs in a bowl add a pinch of salt and pepper and add to pan scramble stirring constantly until eggs are set
- Put cheese on roll and top with egg mixture
