skinless boneless chciken breast can easily be used in place of thighs, just reduce total cooking time.
1. Whisk together mustard, lemon juice, olive oil, parsley, parsley, sugar, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper in small bowl;
2. Place marinade and chicken in gallon-size zipper-lock bag and toss to coat; press out as much air as possible and seal bag. Refrigerate 1 hour flipping bag after 30 minutes.
3. Preheat Oven to 400 degrees.
4. Place chicken broth in a broil pan and place lemon slices in pan. Remove thights from marinate and let any excess liguid drip off, place each thigh skin side down on a lemon slice..
5. Bake in oven skin side down for 10 minutes, flip skin side up ontop of lemon and continue cooking for 15 minutes
6. Turn oven broil to high and place pan close to burners and broil thighs till skin is crisp and browned.
7. Remove thighs to a platter and cover to keep warm
8. Delglaze pan with 2oz. white wine till liquid reduces to half and add 1 tble butter for 1 minute, pour sauce over chciken and serve.
