Broiled Tilapia with Parmesan and Herbs-Whole Foods

Easy to put together. Mild flavor with a creamy topping.

Ingredients

1/2 cup parmesan; freshly grated and divided
2 tablespoons mayonnaise; low fat
2 tablespoons yogurt; Greek-style OR sour cream
2 tablespoons butter; unsalted and melted
2 tablespoons lemon juice; and zest
1/2 teaspoon dried basil
1/2 teaspoon tarragon
1/8 teaspoon onion powder
4 tilapia fillets; 6-8 ounces
Sea Salt; to taste
Black Pepper; to taste

Preparation

Combine 1/4 cup Parmesan cheese with reamaining ingredients (except fish). Coat fillets with mixture and place in baking dish or shallow platter and let marinate for 15-20 minutes. Preheat broiler. Place fillets on a foil-lined broiler pan. Soon a few tablespoons marinade on top and sprinkle with remaining parmesan. Broil 4-6 inches from heat for 5-8 minutes or until topping is lightly browned. The fish is ready when it flakes easily with a fork.

Outstanding! My 2 & 4 yr old had two helpings and my husband asked me to make it again tomorrow! Delicious, healthy & moist and I even cut down on the Parmesan.

Loved this recipe!! I'm not a fan of fish but I not only had a second helping but I took leftovers for lunch the next day. I even completely forgot to add the butter (found it still in the microwave after dinner) so it even tasted great AND stayed low fat!
