Suggest a better descriptionPlace the rice in a bowl covered with hot water. Let it soak overnight. Wash and drain the next morning.
Put brown rice in a medium pot, add coconut oil, almond milk and bring to boil over a medium heat.
Cut vanilla pot from the middle and scrap the seeds into the pod, also put the pod in and boil together about 15 minutes.
Add orange juice, zest and cinnamon and cook for another 5-10 minutes until the rice is cooked soft. If it's still hard you may add little bit of hot water.
Take the vanilla pods out and serve in a dessert plates or bowls warm or cold. Decorate with steamed peaches and mint leaves.
