Brown rice tossed with sauteed zucchini
Cook brown rice until water is absorbed. Let stand while cooking zucchini.
Melt butter in sauté pan over med high heat. Add ginger and zucchini. Sauté until very lightly browned. Add salt and pepper. Toss with cooked brown rice. Add cashews if desired and toss again.
