Mississippi Mud Bars:Immediately after baking, sprinkle brownies with 3 cups mini marshmallows. Return to oven for 3 to 5 minutes until marshmallows are slightly puffed. Cool 30 minutes. Icing:Cream 1/2 cup margarine, beat in 4 cups icing sugar & 1/2 cup cocoa, alternately with 1/2 cup evaporated milk, until light & fluffy. Fold in 1 cup chopped walnuts. Spread over marshmallow layer. Chill to serve.
Heat oven to 350?. Grease a 13 x 9 pan. In large microwave-safe bowl, place margarine. Microwave on high 2 to 2 ? minutes or until melted. Stir in sugar and vanilla. Add eggs, one at a time, beating well with spoon after each addition. Add cocoa; beat until well blended. Add flour, baking powder and salt; beat well. Stir in nuts, if desired. Pour batter into prepared pan. Bake 30 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack.
