These south american sub style sandwiches absolutely burst with smoke, spicy flavour. The Spicy Aioli is adapted from 'esquire rich boy' sandwich
Spicy Aioli
1. Mix all ingredients (except oil) together in a food processor or low speed
2. Add oil, 1 tablespoon at a time while processing until all added
3. Check taste and adjust as necessary
Bombers
1. Grill chorizo on a BBQ or over a very hot cast iron skillet
2. Cut in halves lengthways
Assemble Bombers in sandwich press as follows:
1. Bread, generously buttered on grill side
2. 1 tablespoon of aioli
3. 3 halves of chorizo
4. 2 sliced pickles
5. 2 slices cheese
6. 1 tablespoon aioli
7. Bread, generously buttered on grill side
Serve with a big glass of beer
