Rich, tasty and different way to enjoy chicken
1. Pre heat oven to 180c
2. Mix together the flour, salt, pepper, and grated Parmesan
3. Coat chicken thoroughly in the flour mixture
4. Heat oil in a frypan over a med-high heat
5. Brown chicken on both sides (about 3-4min each side)
6. Place in oven to finish cooking for about 10min
7. Add wine, lemon juice, capers and butter to fry pan
8. Mix sauce scraping up any brown bits from the pan and simmer until sauce reduces by half (approx. 8min)
9. Pour sauce over chicken generously to serve
Serve with season vegetables including some mashed spuds
