Easy, healthy and tasty meal. I often make extra to freeze for leftovers which can be heated in the microwave
1. Blanch the vegetables (half cook)
2. Heat canola oil in a large frypan on a medium heat
3. Add onion and cook until just soft
4. Coat chicken in paprika and pepper
5. Add chicken to frypan and cook until browned
6. Add all other ingredients to the frypan and mix thoroughly
7. Turn up the heat and simmer until vegetables are cooked through (about 5min)
Serve with rice or pasta
