My absolute favorite! Handed down from my Mom!
Toast the english muffins in the toaster, then place all 8 halves face up on a cookie sheet. Top each half with a piece (or more if you have it!) of ham. Cover with foil and place in a warming oven.
Poach or boil eggs to order. If boiled, slice. Take the cookie sheet out of the oven, and put an egg on top of each half, then re-cover with foil on warm. Heat thru.
Make the hollandaise sauce...see recipe "Sauce - Blender Hollandaise". Top each half with hollandaise sauce, and serve.
