14 ounce tomatoes; Diced
1 1/4 cups Mozzarella; shredded
1/4 cup Basil; chopped
6 ounce Stove Top stuffing
8 Chicken breast
1/3 cup Roasted REd Pepper Italian with Parmesan Dressing

Preheat over to 350?. Combine tomatoes, 1/2 c of the cheese, the basil and dry stuffing mix; stir just until moistened. Place 2 chicken breast halves in large freezer-weight resealable plastic bag. Pound chicken with meat mallet or side of heavy can until chicken is 1/4 in thick. Repeat with remaining chicken, adding 2 at a time to bag. Place chicken, top sides down, on cutting board; spread evenly with stuffing mixture. Starting at one of the narrow ends, tightly roll up chicken. Place, seam-sides down, in 13x9 in baking dish. Drizzle evenly with dressing. Bake 40 mins. Sprinkle with remaining 3/4 c cheese. Bank an additional 5 mins or until chicken is cooked through and cheese is melted.

I thought the basil was a bit overpowering. I made my own stove top stuffing, so its possible I got the spice out of whack.

Lovely can be difficult to stuff all ingredients into chicken so I use cocktail sticks to keep it together while cooking.

This was good, I used regular Italian dressing as I couldn't find the type specified in the recipe. It was easy to put together and looked nice when it was done. Will make again!
