"My garden is producing tomatoes and I needed to start using them so I made this recipe and it is great. The only change I made was not to mix the EVOO with the tomatoes, I just drizzled it on top of the tomato mixture before popping into the oven to melt the cheese."

Ingredients

Are you making this? 
2 large cloves Garlic
salt and pepper; to taste
1/2 cup olive oil
6 Roma tomatoes
Fresh basil
French bread
Mozzarella cheese; shredded

Original recipe makes 10 Servings

Preparation

Mix garlic,salt and pepper,and a few drops of oil to make a paste. Add oil,chopped tomatoes,and basil.

Toss.

Brush sliceed bread with oil and place under broiler till a golden colour. Put brochetta and cheese on top. Broil until cheese is melted.
