- Brush both sides of bread with olive oil and place on ungreased cookie sheet.
- Bake for five minutes, turning once until lightly toasted.
- Mix tomatos, garlic, 2 tablespoons olive oil, basil, vinegar, salt and pepper.
- Spoon tomato mixture onto toast and top with mozzarella.
- Bake in oven for 2-3 minutes until cheese starts to melt.
- Serve warm.
