Traditionally, buffalo wings are served with a hot sauce and accompanied by a blue-cheese dressing. Instead of butter to tame the heat, honey does the job here.
Preheat the oven to 425F. Combine the hot pepper sauce, mustard, and honey in a small bowl. Toss the chicken and half of the hot pepper sauce mixture in a medium bowl; let marinate 15 minutes. Arrange the roll halves, cut-side up, on a baking sheet.
Spray a nonstick skillet with nonstick spray and set over medium-high heat. Cook the chicken, turning once, until browned and just cooked through, 3?4 minutes. Stir in the remaining hot pepper sauce mixture and the tomato sauce.
Spoon the chicken and sauce evenly onto the 4 roll halves, then sprinkle with the cheese. Bake until heated through and the cheese melts, 10?12 minutes. Yields 1 piece per serving.
Choose a mild brand of hot pepper sauce that has flavor, as well as heat, to help keep the fire at bay. To maintain the tradition of the blue-cheese accompaniment, serve these pizzas with a salad of iceberg lettuce, sliced celery, grated carrot, diced red onion, and for an extra POINT, 1 tablespoon of reduced-fat blue cheese dressing.
To save on cleanup, use scissors to cut the chicken breast into pieces and work over a paper plate. Shredded mozzarella cheese can be substituted for the Monterey Jack, if you like.
