Chill clean glass bowl in freezer. In a second bowl, whisk flour and baking powder.
In a third bowl, blend yolks, buttermilk, and oil.
In chilled bowl, beat egg whites until foamy. Add cream of tartar. Continue beating until stiff peaks form.
Mix lightly with fork: Flour mix and buttermilk mixture. Batter needs to be semi-lumpy. Fold in egg whites with spatula.
