1/ Cut the half cabbage in four pieces while leaving the root. Cut the onion in slices, and the bacon in cubes. In a fry-pan add 7 ml of olive oil and put at medium heat, put the cabbage on one side and cook it 3 minutes while holding them down. When it's browning change side, put a lid on and steam it for 5 minutes. Take the cabbage off the fry-pan and clean the pan with kitchen paper.
2/ In the same fry-pan put 15 ml of olive oil and add the minced garlic. Add the onion and cook for 2 minutes, add the bacon and cook it.
At low heat, add the butter (10 grams) and 36 grams of flour and cook while stirring until the flour melts in.
3/ Mix the milk, bouillon, salt and pepper and add it to the fry-pan mix and cook at high heat. Once it's boiling lower the heat and cook 6-7 more minutes while mixing. Pre-heat the oven at 250?
4/Place the sauce in an gratin mold and line up the cabbage' s pieces. Cover with grated cheese and cook for 12 minutes (cover with aluminum foil if it's burning.
