Cabbage Patch Soup

This savory cabbage creation is definitely at the head of its class!


1 pound Ground beef; extra-lean
1 cup Celery; chopped
1 cup Onion; chopped
1/2 cup Green bell pepper; chopped
1 clove Garlic; minced
28 ounces Tomatoes; (1 can) , diced, undrained
5 1/2 ounces Tomato paste; (1 can)
5 cups Beef broth; low-sodium, low-fat
2 cups Potatoes; peeled, cubed
1 cup Carrots; chopped
1/4 cup Parsley; fresh, chopped
2 tablespoon Red wine vinegar
1 tablespoon Sugar
1 Bay leaf
1 1/2 teaspoon Basil; dried
1 teaspoon Paprika
1/2 teaspoon Salt
1/2 teaspoon Black pepper
3 cups Savoy cabbage; thinly sliced

Original recipe makes 8 Servings



In a large pot, cook beef, celery, onions, green pepper, and garlic over medium-high heat until beef is browned. add all remaining ingrediants , except cabbage. bring to a boil. reduce heat to medium-low. cover and simmer for 30 minutes.

stir in cabbage and simmer for 30 more minutes. remove bay leaf before serving.
