Cubed Cajun chicken chunks over a bed of chicken flavored rice.
Measure out 3 cups of water and put into sauce pan. Add 4-5 chicken bouillon cubes to the water, heat water to a boil until bouillon cubes are dissolved. Measure out 3 cups of white rice ( minute rice) and add to the chicken broth and take off heat and cover. Let sit until all the liquid is soaked up by the rice. While rice is sitting, cut 4 boneless, skinless chicken breast into cubes. Put chicken cubes in a skillet with about 3-4 teaspoons of vegetable oil. At this time you can season the way you would like. I personally put Cajun, season salt, jerk seasoning, or hot curry powder on my chicken. Cook until chicken is done. By this time the rice will be done. Place a bed of rice on a plate and then put chicken on the rice. This makes 4 servings.
