In skillet, over medium-high heat, saute chicken in olive oil 5 minutes.
Meanwhile, in a small bowl, combine paprika and next 7 ingredients. Add to skillet; cook 1 minute.
In a small bowl, combine chicken bullion or granules with 1 cup hot tap water and cornstarch. Mix well. Add to chicken mixture; cook 1 minute or until slightly thickened. Add mushrooms and scallions; cook 1 minute. Stir in parsley.
To serve, place chicken on platter lined with rice.
(We found minute rice to work better with this meal.)
