Great for use in deserts or just to snack on.
Preheat oven to 300?F
Combine the oats and nuts in a large bowl.
Combine honey, canola oil, olive oil, sugar, syrup, vanilla, cinnamon and salt in a medium bowl and whisk until smooth.
Add wet ingredients to the dry and mix well.
Spray a cookie sheet with cooking spray.
Spread the mxture evenenly.
Bake, stirring and re-spreading the mixture into an even layer every 5 minutes until the mixture is light brown - about 45 minutes.
Turn the mixture onto another pan to cool, stir in the apricots and raisins.
After cool, store in an air-tight container.
