Suggest a better descriptionPrepare pears by peeling, halving and scooping out centre with melon baller. Put peeled pears into a large bowl with ice water and lemon juice. Do this as you work so that the pears don't brown.
Prepare syrup by mixing 6 cups water, the sugar and ginger in a large saucepan. Bring to boil and cook for 12 min, Remove ginger pieces.
Prepare jars by sterilizing in 225 oven for 10 minutes. Add 1 cinnamon stick and 1 tsp whole cloves to each jar. Pack pears into jars, usually 5 or 6 halves will fit. Pour hot syrup over pears, wipe off residue with clean cloth and then seal with a hot lid and jar ring.
Process jars in water bath canner for 20 minutes. Put jars into boiling water, the water will stop boiling but set timer immediately.
ALTERNATE: Ginger and Cardamon Pears
Omit cinnamon and cloves. Add 1 tsp ground cardamon to syrup before boiling.
