Bread pudding topped with Caramel sauce
1. Melt 3/4 cup of sugar in a saucepan on low heat. Pour into oven safe pan and let it cool
2. Boil milk. Once boiling, add remaining 3/4 cup sugar slowly, stirring constantly.
3. Tear up the bread into small pieces and add to milk mixture
4. Keep stirring milk mixture on low heat till mixture becomes thick. Remove from heat and let it cool
5. Beat eggs till frothy
6. Add beaten eggs to cooled milk mixture and stir till combined but not frothy
7. Preheat oven to 350 F
8. Oil sides of prepared pan and put milk mixture on top of Caramel.
9. Place pan in large roasting dish and fill roasting dish with boiling water so that it goes up to half the depth of pudding pan
10. Bake in oven for 45 mins or till knife inserted in centre comes out clean
11. Chill in refrigerator for a few hours before serving. Spoon over excess Caramel sauce over pudding while serving.
