Suggest a better descriptionPreheat oven to 350. Dredge beef in flour. Heat olive oil in a casserole. Brown meat a small portion at a time.
While meat is browning, melt butter and sauté onion.
Add 3 T flour to the skillet and make a light roux. Slowly add beer and brandy and stir until thickened.
Add to meat and onions. Tie bouquet garni and place in casserole. Stir in thyme and worcestershire. Cover for 2-21/h.
Remove bouquet garni, season to taste, garnish with parsley.
