Carmen's homemade biscotti
Preaheat oven to 350.
Beat eggs and sugar.
Add butter and beat until smooth.
Add anise extract. (or almond extract, if using...then remember to eliminate the anise seeds as well)
Mix dry ingredients (except almonds) together.
With a spoon, add dry mixture to egg mixture.
Stir in chopped almonds.
Divide into 3 parts. Roll each 1 1/2" wide.
Bake 20-25 minutes.
Remove, slice diagonally 1"
Bake to brown, approximately 20 min.
You can use salted butter since no salt is added to the recipe, if you like.
You can replace the anise extract with almond extract and leave out the anise seeds.
