Carne Con Papa (Cuban Beef Stew)

This hearty beef stew is usually served over rice but can be enjoyed alone as well.


3 Potatoes; (Peeled and Largely diced)
1/2 pound beef cubes for stew; (or cube your favorite steak)
1/4 white Onion
1/4 Green Pepper
2 tablespoons Garlic Powder
1 tablespoon Oregano
4 oz. Tomato Sauce
1 1/2 packet Sazon Goya
4 oz. Dry White Cooking Wine
3 cups Water
1 Bay Leaf
Salt and Pepper; to taste
1 1/2 Beef bouillon cube
1/2 teaspoon Cumin
1 teaspoon Cilantro paste

Original recipe makes 4 Servings



Combine all ingredients in a pressure cooker.

Cook on Medium/High heat for 40 Minutes.

Let steam out and serve over white rice.

It can also be made in a large pot on Med/High heat for approx. 1 hour.

you can also add fresh tomatoes towards the end or carrots.

I think adding pink beans or acorn squash to this, either with or in place of the potatoes, would be great.

Neither my husband nor I enjoyed this. It had a one-dimensional flavor (maybe it calls for too much oregano?) and wasn't at all spicy. It was also very watery, though that may be because I slow-cooked it.

This was so good my family said it was one of the best things I've made. Left out the green pepper, dry white cooking wine & oregano because I didn't have them, put everything in the crockpot & let cook for 6 hrs & mmm! Mmm! Good! Thanks so much
