Preheat oven to 350 degrees F. Grease and flour a 9 X 13 inch baking pan.
Add all ingredients (except icing) to a large mixing bowl or food processor. Mix well using hand blender or food processor
Bake for 40 minutes. Let cool slightly before frosting, if desired. Serve warm if serving withour icing or cooled.
Yield 8-10
Goat cheese icing
4 oz goat cheese
2 oz butter, softened
1 tsp vanilla extract
1.5 cups confectioners’ sugar
Combine all ingredients in food processor fitted with an s blade. Blend for 1 min. Place in a small bown, cover and let chill in the refrigerator while you make the cupcakes.
