Y'all I'm not much of a baker...I'm not really a "sweets" kinda gal, so I don't do much baking. However, after two years of my boyfriend begging me to make him a cake for his birthday, I decided to break out of my shell and try a popular recipe I found on pinterest (with some 'tweeks' of my own). So, after rereading the recipe 50 times to make sure I had all my measurements right, some blood sweat and tears (literally...I grated my poor thumb while grating the carrots), and pacing back and forth while it baked, what came out of the oven was a pleasant surprise!! My boyfriend absolutely loved it and even said that it was worth the two year wait :) Such a 'sweet' accomplishment in my book! hehe
For the cake:
1. Preheat oven to 325 degrees and lightly grease and flour a 9x13 baking pan/dish.
2. In a large bowl, combine oil, sugars, vanilla, and eggs together and blend well with a electric mixer.
3. In a separate bowl, sift together the flour, baking soda and powder, salt, cinnamon, and nutmeg.
4. Gradually add the flour mix to the sugar and egg mixture and mix well.
5. Stir in the grated carrots and pecans if you choose; pour into pan/dish and bake for 40-45 minutes or until toothpick or fork comes out clean after inserting in the middle of cake.
6. Remove from oven to cool off while you prepare frosting.
7. In a small bowl combine the melted butter, salt, cinnamon, and brown sugar to taste.
8. Place chopped pecans on a baking sheet and pour butter mix over pecans.
9. Toast pecans until desired doneness; Remove and keep warm.
For the frosting:
1. In a medium bowl, mix together softened cream cheese and butter with electric mixer until smooth.
2. Gradually add powdered sugar (1/2cup each time) mixing well each time.
3. Add 1 tsp vanilla and mix well again.
4. Spread evenly on cake; top with toasted candied pecans.
5. Enjoy!
